Seafood & signature dishes — daily Hokkaido fair and hot pot

What are your signature dishes?+
Our five signatures: the 7-item seafood tower, flame-seared fatty swordfish nigiri, Hokkaido zangi mountain, flaming hokke chan-chan-yaki, and the overflowing salmon roe bowl. Plus the famous gout hot pot.
What is the overflowing salmon roe bowl?+
A bowl piled so high with salmon roe that it overflows, served with a hearty cheer from our staff. It's our most-photographed dish — just how high it's piled is a surprise you'll have to see in person.
What is the gout hot pot?+
A seafood hot pot piled with purine-rich delicacies — oysters, soft roe, monkfish liver and more. The playful name comes from those purines. Enjoy in moderation if purines are a concern.
What is zangi?+
Zangi is Hokkaido's word for fried chicken, said to have started in Kushiro around the 1950s. The hallmark is a bold, well-marinated flavor. We serve it Hokkaido-style, piled high.
What is chan-chan-yaki?+
Fish and vegetables grilled on an iron plate with miso — a Hokkaido fisherman's dish, chosen in 2007 as one of Japan's 100 representative regional dishes. We use hokke, finished with a flourish of flame.
What is the flame-seared swordfish nigiri?+
Flame-seared fatty swordfish nigiri — our No.1 add-on order. Smoky aroma meets a melt-in-the-mouth texture.
Is the seafood fresh?+
Yes. We serve catches sent direct from Hokkaido's ports, so you can enjoy seafood at its freshest in Shinsakae.
What's in season right now?+
It varies by season — spring: king crab; summer: hokke and uni; autumn: salmon and ikura; winter: cod and oysters. Ask our staff for today's best.
Do you have the uni dog and snow crab sushi?+
Yes, these popular specialties are available alongside the five signatures. Availability can vary by day, so please ask.
Can you accommodate allergies or dislikes?+
Please let us know in advance and we'll do our best to accommodate. Tell us when you reserve.
What do you recommend to finish the meal?+
The gout hot pot makes a warming finale — add rice or noodles to the umami-rich broth. The 'devil' rice porridge in the steak course is also popular.
Can I watch the tuna-cutting show?+
We hold a powerful tuna-cutting show. Dates vary, so please ask when reserving — it's popular as a banquet highlight.
